Libyan stuffed potato Aka Embatin (with a twist *_^)

Embatin which basically means stuffed is a traditional Libyan dish and let me tell you it's delicious indeed even though it might not be the healthiest option out there :p , here's my recipe with a kind of a ''romantic'' twist if you like to call it ;D , bear in mind that i mostly eyeball the ingredients but i will try my best to give you more precise measure of everything..
ingredients :
- 3 large potatoes .
-1 T.s of minced onion ( a quarter of an onion) .
-half a clove of garlic (minced).
-ground meat,i don't have a measurement i just eyeball it >< but i'd say a handful ! ( what a glamorous way to measure LOL! ).
-chopped parsley.
-chopped chili pepper (if you like some spiciness).
-salt, ground pepper, cinnamon, cumin( key ingredient) .

how to make :
After washing and peeling the potatoes you need to cut them into slices but not too thin you need to be able to make some kind of a pocket into the slice if you know what i mean, then with a heart-shaped cookie cutter cut into each slice, then take your heart-shaped slice and with a sharp knife split it into half but don't cut it all the way through, stop near the end , make a pocket , i hope it makes any sense :D..

now to make the stuffing mix the the meat , the onions, garlic, parsley, pepper, and the spices together really well, you will end up with something like this..

now fill your hearts <3 ''with meat hehe ;p ''

<3

now you need to coat the hearts <3 , first with some flour, then with a beaten egg white with a sprinkle of cumin , then with some bread crumbs ..

the hearts should look something like this once all nice and coated ..

now fry them in a hot deep oil , on a low heat so that everything cooks really well..

once they are golden in color take them out and put them on a kitchen towel to absorb any excess oil..

serve them as you wish and enjoy :)
